Today I'm posting my Tuesday recipe that is another one of my husbands favorites. A few years ago my cousin relocated only twelve miles from us. She is a lot younger than I, so we didn't know each other very well. It's been nice getting to know each other. They have been very kind to invite us for a meal several times. I am very bad at reciprocating, and I have no excuse for just being lazy. This recipe is one that she served. We enjoyed it very much and have made it several times since. You can use as many chicken breasts as needed. Just cover with ham and cheese and adjust the cream soup accordingly. It's not an exact science.
Chicken Cordon Bleu
3 - 4 boneless skinless chicken breasts
Sliced deli ham
Sliced Swiss cheese
1 can of cream of chicken soup
Preheat oven to 350 degrees.
Spray a 9 x 13 inch pan.
Place chicken in pan and cover each chicken breast with a couple slices of ham.
Then place sliced Swiss cheese on top of meat.
Spread soup evenly over all. Cover with foil and bake for about 45 minutes.
Uncover and let it brown a little, probably about 15 minutes.
When it bakes the ham wraps itself around the chicken breasts. I think the drier the Chicken Breast the less likely it is to separate when eating it.
